It's always inspiring to see people so young that
understand sustainability. A middle school student in California
conducted a food waste audit at her school and was able to reduce
the students' food waste from four gallons per day to one and a
half gallons per day in just two weeks.
With all the benefits of food waste digestion, it's easy
to forget the innate benefits of food waste reduction. Reducing
the total amount of food waste should be a strong focus, while
digestion can handle the waste that cannot be reduced (spoiled,
trimmings, etc.) The order of the three R's (reduce, reuse,
recycle) are just as applicable to food waste as to drink
containers. As there will always be waste that cannot be reduced,
we must be sure to handle it in the most sustainable fashion.
