On-farm waste is an excellent source food waste digestion
projects. Processing fresh produce from the field to the market
produces a huge amount of organic waste. An onion processor in
California, Gills Onions, will be digesting trimmings into biogas
that will be converted to electricity for use on-site to run the
facility. The facility will cost about $9 million, but save more
than $1 million a year in electricity and disposal costs. With
volatile energy costs and food prices, anaerobic digestion of
waste represents a real solution to securing the economic (and
environmental) future of our farms.
