This article is a good synopsis of some of the ethical issues
of wasting food. Overproduction and overconsumption in the
developed world, once thought a sign of prosperity, are now
creating huge environmental and social problems across the globe.
There are signs that a paradigm shift is coming as we begin
addressing our waste problems, but to be truly sustainable we must
abandon the traditional consumption mentality, and start living
cradle to cradle. An integral part of this will be capturing
energy and nutrients from our food waste, or rather our
post-consumer organic resources.
