A new report by WRAP (waste & resources action program) in the UK
details the waste composition from the UK's hospitality industry. Of
the 1.5 million tonnes sent to landfills, 600,000 tonnes was food waste.
400,000 tonnes of food waste could be avoided through reuse, donations,
and better management, while the remaining 200,000 tonnes is unavoidable
and could be diverted to anaerobic digestion. Eliminating the avoidable
food waste would save £722 million annually, while diverting
unavoidable food waste to digesters could save an additional £2
million. This report has many important lessons particularly to Florida
because of it's large hospitality industry.
