Hello BESTers,
Last week I sent out an article about the compost program at UT. This
week there's news of another large land-grant university recycling its
food waste, Michigan State University. At MSU, food waste from their 13
dining halls is either vermicomposted using worms or sent to a pilot
anaerobic digester. These examples demonstrate that campus-scale
composting and food waste recycling can happen at even some of the
largest universities. In fact, these programs fit perfectly into the
mission of land-grant universities (such as UF) to provide state-wide
agricultural education. Food, food waste, nutrients, and soil organic
matter are all essential components of agriculture.
