This week, New York's Mayor Bloomberg announced that 100 restaurants in
the city, including high-end restaurants and chains like Chipotle, have
pledged to reduce food waste by 50%. Food waste accounts for a third of
the city's waste and restaurants account for 70% of commercial food
waste, according to the mayor. The city will be expanding existing
compost pilot programs to accommodate this diverted food waste. The
mayor also announced that the city will be opening nine acre's of city
property for community gardens, which will be spurred by the increased
compost. In a city that tends to set the standard for cuisine and
dining out, will hopefully now be setting the standard for reducing
restaurant food waste.
