Grocery stores are some of the biggest generators of food waste.
However, in many cases, grocers don't know (or don't disclose) exactly
how much food waste they generate. This is changing in the UK, where
the country's largest grocery chains have pledged to regularly release
to the public how much food waste they generate. This movement was
spearheaded by Tesco last year, when the chain admitted to generating
28,500 tons of food waste in the first six months of 2013. The chains
have also committed to reducing the waste they send to landfills to 1%
by 2020. It will be interesting to see if this trend jumps across the
pond, and US grocery chains increase the transparency of their food
waste problem.
