A project pilot in West Philadelphia is taking a comprehensive approach
to food recovery. Researchers at Drexel University and University of
Pennsylvania are working with local grocery stores to determine how much
food waste can be recovered for food pantries or re-purposed to gain
additional revenue for the store. For example, bruised and overripe
bananas, which would likely not even be accepted at a pantry, could be
pureed and frozen at the store to be sold as banana ice cream. The
project is also looking at partnerships between the universities'
culinary programs to use soon-to-be-discarded food from the grocery
stores for food research and development. If all goes right, they'll
have some developments they can show Pope Francis, who is one of the
most vocal proponents of food recovery, on his visit to the city next
month.
