Hello BESTers,
This past week, world leaders at the UN sat down for a lunch made
entirely of food waste that was destined for the landfill. Former White
House Chef, Sam Kass, prepared a menu including burgers made from pulp
from a juice plant, fries made from leftover feed corn, and cucumber
butt pickles. The purpose was to raise awareness of the impact of food
waste on climate change in preparation of a UN climate summit later this
year in Paris. According to the FAO, if food waste were a country, it
would be the third largest source of greenhouse gases behind China and
the US. The UN seems to be taking food waste seriously as they recently
matched the US's goal of reducing food waste by 50% by 2030 as one of
its 17 Sustainable Development Goals.
