Good evening BESTers, Restaurants are a huge source of communities' food waste. The city of Danville, CA is currently collecting food waste from 45 restaurants for feeding to municipal anaerobic digesters for biogas energy, and they're looking to expand to more restaurants. Perhaps another future step would be to establish small digesters at the restaurants themselves where they can use the biogas on-site. Danville understands that food waste should not be a burden on society but rather a resource.
