Hello BESTers, A composting technique called bokashi that has been practiced in Japan for centuries is on the rise in the US. Bokashi uses a blend of microorganisms that are mixed with food waste. The food waste ferments and is buried where it degrades into "soil". The process is supposedly odorless and allows the composting of meat and some dairy and oils. According to the US Composting Council, there is little research on bokashi, and some claim that it is a gimmick since the microorganisms occur naturally without needing to purchase them from a supplier. Although I don't have any experience with bokashi, it does seem too good to be true, one wonders if fermentation is occuring, how is the process odorless and if there are any methane emissions from the process.
