Just a quick article this week about a new restaurant chain in Amsterdam that serves nothing but food waste.  InStock started as a popup restaurant serving surplus food from the grocery store the founders worked at.  It now has 3 permanent locations in the Netherlands and collects food from 160 grocery stores.  The success of this restaurant could set an example for others to follow.
